It's easy to make soup from organic vegetables that will surely delight your taste buds. All you need is organic dried beans, canola or olive oil, chooped onions, fresh herbs, uncooked rice, low-sodium chicken, vegetable or beef broth, crushed or diced tomatoes and frozen vegetables. Soak beans overnight in 8 cups water overnight. Cook 1 chopped onion in oil or broth in a large, deep pot over medium-high heat until deep golden brown. Add drained beans, broth and bay leaves. Bring to a boil, cover and simmer until almost tender, about 2 hours. Skim off and discard any foam that shows up on the surface. Stir tomatoes, herbs, rice, frozen and vegetables. Cook until hot throughout, about 10 minutes more. You can try many variations like pinto, black, cannellini, kidney, garbanzo,= and lentils.
